Sunday cook up - vegetarian steaks

Vegetarian Steaks with a homemade tomato sauce.

This recipe is so easy and so delicious and healthy too! We usually have it for dinner but there's no reason why it can't be a great breaky too! Our little Master 23months loves this dish, and often helps with making the steak mixture.

Ingredients:

For the steaks- (makes 8)
1 1/2 cups rolled oats
1/2 cup self raising wholemeal flour
4 eggs beaten with...
1/2 cup milk
Optional- a little diced capsicum or grated zucchini.

For the sauce-
1 onion- diced
3-4 garlic cloves crushed
2 carrots - grated
400g diced tomatoes can (& the same can filled with water
Approx 240g good quality pasata /tomato sauce
Season to taste

Method:

1. In a saucepan, fry the onions and garlic in a little oil til golden, add the carrot, a couple of mins later add the tomatoes, water and sauce, simmer for 20-30mins, season to taste.

2. Mix all the 'steak' ingredients in a large mixing bowl, leave the oats soaking for approx. 30 mins. The mixture should fall easily off a ladle, if not, add a little more milk.

3. Ladle the mixture into a non stick pan with a little oil, until the patties (steaks) are cooked through with a little colour on each side.

4. Add the tomato sauce mixture to the vegetarian steaks.
